These are some of our favorite rolls.  They are especially good with water leftover from cooking the potatoes and homemade mashed potatoes.  If I do not have homemade mashed potatoes, I use instant along with plain water.  Still good but not as flavorful as using homemade with roasted garlic.  I don’t worry about setting aside unseasoned potatoes; just cut back a little on the salt, maybe 1/4 teaspoon if heavily seasoned.  I discovered that these are even better when allowed to rise until almost the top of the bread machine for the first rise and then quite puffy as rolls.  The dough cycle on the bread machine works quite well.  These do hold up well for a couple days.  I usually make about 20 rolls.
