Mexican Strata is similar to a chile rellenos quiche and makes a very quick meal. It calls for corn tortillas but I am sure flour tortillas can be substituted.
- 10 corn tortillas
- 3 cups or 12 ounces shredded Monterey Jack cheese
- 6 eggs, beaten
- 1 cup milk
- 4 ounces chopped green chiles
- 1/4 teaspoon salt
Preheat oven to 350°F. In a greased 9×13-inch baking dish arrange a layer of tortillas. In a medium-sized bowl combine cheese, eggs, milk, chiles and salt. Pour mixture over tortillas and sprinkle with paprika. Bake 35 minutes or until lightly browned. Allow to stand 10 minutes before serving. Makes 6 to 8 servings.
Serve with sour cream and refried beans, if desired.
